The Chamosim Estate was a coffee plantation owned by a man named Henrique Slopper d’Araujo. Everything was fine, but the man was troubled by the flock of Jaku birds coming here, which used to pick and eat good coffee beans. They ruined the plantation, but Henry could not do anything for them. In fact, the Jaku bird is one of the rare species in Brazil, which is protected by law. After adopting several methods, Henryk remembered his trip to Indonesia, in which he had come to know about another expensive coffee cup of waryki luwak. He used the same process of Luwak coffee in his plantation.

Actually Luwak coffee is processed by sifting it from the feces of an animal named Civet. In Brazil, Henrique persuaded the workers to make coffee from the feces of the Jaku bird by paying more money. Eventually he agreed to clean the coffee cherries out of Jaku’s feces. All the work was done by hand and the process was very laborious. Since the Jaku bird eats highly selected coffee, the quality of the cherries obtained after digestion is good. The bean is obtained and processed and then coffee is prepared. The taste of this coffee is mild, nutty and sweet.
